A Pearfect Solution

Look, I like pears. I do. I like them a lot, actually. But what am I supposed to do with the two dozen pears a week that my farm share has been giving me? Even if JM and I could eat that many pears without getting, um, sick, we would end up with no appetite to eat all the other weird fruits and veggies they give us. So now, in an effort to avoid wasting food, I am on a mission to come up with as many pear-related recipes as I can, in order to foist them on other people. I know, it's diabolical.
Last night's pear experiment: Pear Bread. Yeah, like banana bread, only with pears. And, also, like banana bread, it's very quick and easy to make, and is ... I believe the technical term is freaking delicious. If I could bottle the way this bread made my kitchen smell while it was baking, I would be irresistable to men. And women. And animals of all kinds, probably.

Hmmmm... maybe I can eat all those pears, after all.

What you need:
3 cups all-purpose flour
1/4 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 tablespoon ground cinnamon
3/4 cup butter, melted and cooled
3 eggs
2 cups sugar
2 cups pear, peeled and shredded (about 4 pears)
2 teaspoons vanilla extract

What you do:
1. Preheat the oven to 325 degrees. Grease and flour two loaf pans, and set aside.

2.In a large mixing bowl combine flour, baking powder, baking soda, salt, and cinnamon.

3. In another bowl combine the butter, eggs, sugar, grated pears, and vanilla. Mix well with a whisk. Add to wet ingredients to dry ingredients. Stir until just moistened.

4.Spoon batter into prepared loaf pans.

5. Bake for one hour and 15 minutes. Cool on wire rack before removing from the loaf pans. Num num num!

I took my pears and cut them in chunks (skin, seeds, and all) and used the food mill to make 2 cups of puree. Turned out great! This recipe is a keeper.
