Last night's pear experiment: Pear Bread. Yeah, like banana bread, only with pears. And, also, like banana bread, it's very quick and easy to make, and is ... I believe the technical term is freaking delicious. If I could bottle the way this bread made my kitchen smell while it was baking, I would be irresistable to men. And women. And animals of all kinds, probably.
Hmmmm... maybe I can eat all those pears, after all.
What you need:
3 cups all-purpose flour
1/4 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 tablespoon ground cinnamon
3/4 cup butter, melted and cooled
3 eggs
2 cups sugar
2 cups pear, peeled and shredded (about 4 pears)
2 teaspoons vanilla extract
What you do:
1. Preheat the oven to 325 degrees. Grease and flour two loaf pans, and set aside.
5. Bake for one hour and 15 minutes. Cool on wire rack before removing from the loaf pans. Num num num!
Made this tonight and it was great!mI'm going to do it with carrot instead of pear next time. Maybe apple too. Or zucchini.... so good.

ReplyDeleteI took my pears and cut them in chunks (skin, seeds, and all) and used the food mill to make 2 cups of puree. Turned out great! This recipe is a keeper.
